A Piedmontese, Chef Romeo combines deep respect for Italian traditions with a flair for innovation, shaped by his experience in Michelin-starred restaurants and fine-dining venues across Europe, the Middle East, and Asia.

“At aqua, I aim to honour Italian traditions while reimagining them for a modern audience. My goal is to create dishes that feel elegant yet comforting, and to offer guests a connection to Italy through every bite.” Chef Romeo explains.

Chef Romeo’s vision for aqua’s Italian kitchen is to present a menu that celebrates Piedmont’s renowned ingredients, including truffles, peppers and anchovies, while embracing seasonality, sustainability, and modern techniques. He aims to create dishes that push the boundaries of authentic Italian dining, offering guests dishes that tell a story.
